Where are cake fridges used?

A commercial cake fridge might be used anywhere in business cold food is served, either in retail environments for later consumption, cafes and other food service establishments to be eaten immediately, or in other locations like cafeterias, hospitals, schools and so on. The design of this type of unit means the food is constantly on show. So a stand alone or counter top cake display fridge would make a great feature in a cafe or shop.

They serve several important purposes:

• Displaying items to allow customers to make a selection.
• Storing delicate items safely to avoid becoming misshapen or crushed.
• Keeping chilled foods below the minimum safe storage temperature.

Cake and patisserie fridges also give staff good visibility of stock levels, so that specific items can be replenished as and when they are needed during the course of service, and especially in peak times such as lunch and dinner.

How do cake fridges work?

A cake fridge has one or more chilled shelves or racks on which fresh products such as cakes and pastries can be displayed while held at a controlled low temperature.

This is achieved through convection of chilled air throughout the cabinet, resulting in an even distribution of cooling air around each item via a method that is suited to the delicate sponge, pastry, whipped cream and other common patisserie ingredients.

Chilled cake display fridges may be open-fronted for self-service, or fully enclosed, helping to maintain the lower temperature inside and allowing for customers to be served by an attendant instead of helping themselves to their chosen items.

This is particularly beneficial when serving unwrapped delicate food items such as cupcakes and Danish pastries, as well as serving up individual slices of larger items like layer cakes.
